Recipe: Beans and Greens

2 tablespoons olive oil
1 chopped onion
2 cloves garlic, sliced
1/4 teaspoon red pepper flakes
Salt and freshly ground black pepper
2 cups kale, washed, stems trimmed and chopped
1 (15- ounce) can cannellini beans, drained
3/4 cup chicken stock

Total Time: 20 minutes
Prep time: 5 minutes
Cook time: 15 minutes
Yields 3-4 servings

Heat olive oil over medium heat
Add garlic and onion and sauté for about 3 minutes or until tender
Add red pepper flakes, salt, and pepper while stirring
Add kale and let it cook down a bit
Finally add the beans and the chicken stock
Let it cook for 10 minutes
Remove from the stove, and enjoy!
