Pudding doesn’t have to include added sugar, cornstarch, or questionable additives. In fact, this nutrition gold-mine of a pudding recipe includes just 3 ingredients and 2 are vegetables! If you are fan of sweet, creamy foods (i.e. ice cream), this is a seasonally-appropriate, vitamin-rich option for sweet cravings.
1 medium sweet potato
Cinnamon, to taste
Pumpkin pie spice (optional)
Roughly chop vegetables and place in medium pot with water to cover them. Bring to a boil and then simmer for 10-15 minutes. Let cool and then add to blender (with water from the pot) and mix until ingredients, including spices, are combined in a smooth texture. Enjoy warm or cold!
