Red, White, and Blueberry Tart

You may remember this beauty being featured on WBNS 10TV in honor of National Pecan Month. This healthy dessert is easy to make and fun to decorate. Made from fruit and nuts, the tart is raw, vegan, gluten-free, and dairy-free. Did we mention delicious? Because it’s definitely that too! Enjoy it this holiday weekend.

Ingredients

Crust

1 cup chopped nut blend (we used 1/2 cup walnuts and 1/2 cup pecans)
1 cup chopped dates
1 cup flaked or shredded coconut
1 tbsp cinnamon
1 tsp vanilla extract
pinch of nutmeg, optional

Toppings

1-2 mashed bananas
Blueberries, strawberries, and kiwis to decorate (about 1 cup of each)

Instructions

Soak dates in warm water for about 10 minutes to soften them. Chop nuts with a knife or use a food processor. Drain dates and mix with nut blend, coconut, cinnamon, and vanilla extract in a bowl. Once well mixed, roll into balls and press into pie plate. Mash bananas and add a layer or ‘frosting’ to the crust. Top with berries and kiwi or your desired fruits. For extra pizazz, drizzle honey or melted chocolate over the tart.

Spring Mediterranean Salad

The Mediterranean Diet features beneficial fats, fiber, protein and a variety of vitamins and minerals which help keep us healthy. Many studies suggest that the Mediterranean way of eating can improve heart health. Plus it’s easy to follow at any meal – breakfast, lunch, and dinner.

Salads deserve a special celebration this month because they are an excellent vehicle for getting in our greens, veggies, healthy fats and protein sources. They don’t have to be boring either! To help create variety, consider choosing a different protein to add in for your salads (i.e. chickpeas, salmon, hardboiled eggs, steak strips, nuts & seeds). Another idea is to choose a cuisine to inspire you. If you like Greek food, make a Greek salad; or try a Mexican, Italian, or French one.

By getting in a salad on a regular basis, you will be getting more nutrients, fiber, and antioxidants which help reduce the risk of cardiovascular disease, improve digestion, help with weight maintenance, and boost immunity! Here’s an template for a Mediterranean Salad; feel free to add items to make it your own!

Serves 1-2 people
Prep time: 15-20 minutes

Ingredients

Salad
2-4 cups of salad greens
1 cup cherry tomatoes
1 sliced cucumber
1/2 cup red onion, chopped
1/2 cup olives
1/2 cup bell pepper, chopped
1/2 cup fresh parsley, chopped
1 avocado, sliced or 1/4 cup hummus

Dressing
2 tbsp olive oil
2tbsp lemon juice
2 cloves garlic, minced
2 tsp oregano
1/2 tsp salt and pepper to taste

Instructions

Rinse salad mix and place in medium-sized bowl; add other salad ingredients. To make the dressing, add ingredients into a bottle and shake well before pouring over the salad. Store in the fridge to keep fresh. Enjoy the fresh, juiciness of this salad!

Fiesta Egg Frittata

Aaah, the freshness and promise of the back-to-school season. Even those of us not in school still seem to embody the spirit of excitement of learning and accomplishing goals. As every probably knows by now, a healthy breakfast is a key part in providing us with proper energy and focus. Enter the Fiesta Egg Frittata – these little muffins are colorful, easy to make, nutritious AND delicious. So many wins in such a small package!

Fiesta Egg Frittatas
Total Time: 30 minutes
Servings: 6

Ingredients
10 organic eggs
1 cups chopped bell peppers
1 cup chopped spinach (or baby kale)
1/2 cup chopped cilantro
1/2 cup chopped onion
I cup diced mushrooms
1 tsp chili powder
½ tsp cumin
½ tsp sea salt
½ tsp black pepper

Instructions
Preheat oven to 350°F. Lightly coat (12-compartment) muffin tin with non-stick cooking spray or use baking cups. Heat 1 tbsp olive oil in pan and add onion, mushrooms, and bell peppers; sauté for about 3 minutes. Add spinach and cook an additional 2 minutes. Place about 2 Tbsp of veggies into each muffin cup. Whisk eggs in medium-size bowl with chili powder, cumin, salt and pepper. Pour egg mixture over veggies in the muffin tin until about 80% full. Cook for about 25 minutes, until inserted butter knife comes out clean. If not using baking cups, take knife around the edges of the muffin tin to remove egg frittatas.

These breakfast treats are best enjoyed hot but can be kept in air-tight container in fridge for up to 5 days. Grab 1 or 2 on your way to school or work!

Initially, I was nervous because I had never worked with a nutritionist and did not know what to expect.  Reading reviews online and learning that you took a more wholistic approach helped calm my nerves as it aligned to how I like to view health and nutrition. Since the start of our working together,  I have been able to switch to a healthy vegan diet and have lost approximately 18 pounds.  While these were my reasons to start the program, Adrienne helped create more balance in my life, helping to manage my stress levels and emphasizing taking care of my whole self.

I really appreciated your positive approach to coaching.  You never made our meetings about just losing weight, but about educating me on how to construct a healthy diet in a sustainable way that does not feel like a “diet”.  The focus on health and energy over calories or eliminating food groups helped make this a fun program that included trying new recipes and techniques that kept it interesting and exciting.  I have a whole new set of recipes that are both delicious and healthy.

Also,  I benefited from the visualization parts of the program greatly. The 1 month, 6 month, and 1 year goal setting exercise helped me stay on track and stay motivated.  It also allowed myself to really think about what I want to accomplish this year.  It has helped from a health perspective, but it also helped me to visualize and come terms with where I wanted to be with my relationship, my self care, and my career.

Trauma: An Awakening to Resilience

No one is free from trauma, even those who eat goji berries. One need not look further than the biblical story of Job or into the Buddha’s insights with the Four Noble Truths to see that suffering is indeed part of the human condition. Avoiding confronting painful events is like holding a beach ball under water. Sure you can do it, but it takes a lot of energy and it’s still likely to fly out of the water anyway (usually when you least expect it). It takes courage to examine these painful experiences and to follow a healing path, knowing that recovery is possible.

Dr. Peter Levine defines trauma as a result of instinctual resources of self-protection being overwhelmed, possibly as a result of perceived life-threatening experiences. We often think of trauma relating to soldiers returning from war, victims of severe abuse (including neglect) and violence, or those who’ve suffered catastrophic loss, accidents, or injuries. However, Dr. Levine suggests that trauma doesn’t have to originate from a single, major catastrophe; in fact, routine invasive medical and dental procedures, illness, birth stress (for mother and baby), natural disasters, or even minor car accidents can be traumatizing.

Childhood Trauma

Research shows that adverse childhood experiences (ACEs) are strongly correlated with the development of a wide range of health issues throughout a person’s life. Even if not a major event- for small children, just their parents yelling, thunder, or even a toy that scares them (i.e. a jack-in-the-box) can overwhelm their self-protective resources. Each person has their own resources and experiences that will influence whether something is exciting and fun or horrible and fear-inducing.

Effects of Trauma

Trauma can have debilitating after-effects in both mind and body. Unresolved trauma can be devastatingly life-altering and affect our thoughts, beliefs, habits, relationships, and decision-making abilities. For some, it can trigger physical pain and symptoms, even years later.

One of the wide-ranging ways trauma can effect us is by loosening the connection to ourselves, family, and even the outside world. We constrict our choices as we avoid certain places, people, and feelings. This can cause us to feel less energized and to lose opportunities for fulfilling our dreams and goals.

Begin your Healing Path

A gradual healing process can be helped by body-workers, therapists or psychologists, friends, family, life and health coaches, and more. This is a time to treat yourself gently and engage in extreme self-care. You may feel weak upon beginning your path, but your strength and your resilience will slowly build.

The good news is that we have within us the ability to master and transform trauma into triumph. May your inner journey help you recover a deeper sense of wholeness.

First of all, let us express our admiration and pride for every one of you who participated in the recent Sugar Detox Challenge. From the early days of listing your reasons for wanting to embark upon this journey -including weight loss, defeating your sweet tooth, better energy, and improving diabetes and hypoglycemia – you’ve worked hard for these results!

“I’ve found an increased variety in my foods, feel less bloated and have better digestion. I haven’t been putting sugar in my coffee and found that the ‘hidden sugars’ were my issue.

I’ve found substitutions that allow me to still enjoy a drink but without all the sugar usually added. I’ve consistently found myself at 25 grams or less of sugar – sometimes as low as 8g or even 3g! At work luncheons I make the best decisions I can around food and the sugar isn’t even tempting to me!

I feel energized, strong, and centered. I have more clarity and am not tempted by the dump truck of sweets coming into the office; it’s not appealing. If I want to splurge, I don’t waste my sugar allotment on crap; I want a quality treat.

For the first time since Sugar Detox Challenge started, my acupressurist was impressed and said I was not so tight, or bounded like before, with less chi blockages.

This challenge has been really impactful – I feel my body is rejecting sugar. My clothes are fitting better – (including a previously too-small flannel pullover!) Keeping track of my sugar has become a bit of a game that keeps me on track.

My significant other participated in the challenge too, and he has a sweet tooth, but he has lost 9-10lbs in 3 weeks!

“Looking back, I feel a bit sick. I didn’t feel like I was doing anything out of the ordinary American diet. I even thought that perhaps I was eating better than my peers. That type of thinking made it easy for me to ‘treat’ myself on a regular basis. So my previous days would start off with coffee, flavored creamer, and then either sugar or artificial sweeteners. The cereals, lunches, dinner entrees, snacks, and even low-calorie desserts I ate were not helping me achieve my goals and I was considering skipping meals to lose weight.
